Our Beginning
It all started in 1996, when Juan Manuel stepped into his first kitchen in Chicago.
With nothing but hard work and passion, he mastered the back of the house, dish by dish.
Years later, he brought that same dedication to Minnesota, working as head chef in beloved pizza chains.
But his dream was always bigger—creating a place of his own, built on flavor, family, and love.

Today, El Fresco is a reimagined hidden kitchen in Bloomington, MN, serving bold fusion comfort food.
Run by Juan Manuel and his family, the menu is crafted to satisfy every craving—tacos, pizza, burritos, burgers, and more.
